Four aspiring Brooklyn chefs came together at Brooklyn’s lovely Paradise Catering Hall in Gravesend for the first Tasting Party sponsored by Les Lotus Noire (lay-lotus-nwa), a new event management company. In uniform and in front of their chafing trays and masterpieces stood attentively waiting for attendees – Chef Shae, Chef Calle, Chef Wendy and Chef Allona.

Les Lotus Noire partners greeted their guests at the door on Sunday evening. As they were escorted to seats at numbered tables, Cameron Orr smoothly serenaded guests with his violin. On each table, to accompany the night’s tasting, sat a bottle of Merlot, a bottle of Sauvignon Blanc, and a pitcher of iced water to cleanse the palate after each taste.

About one hundred eager participants dressed elegantly in formal attire entered the main banquet room ready to try specialty dishes that might serve as future wedding, baby shower, or major milestone birthday party meals.

 

Daneshia Lynch creator of “Drunken Shots“, desserts for the grown and sexy, served mouth-watering Oreo cheesecake bites and stuffed strawberries first, to whet the appetites of attendees.

Chef Shae presented and served the first taste – garlic crusted pork shoulder on top of a small bed of cilantro jasmine rice encircled by apple cabbage. Shae Davis is the owner and operator of the Coney Island restaurant, GoodfoodbyShae. She creates sumptuous southern and Caribbean soul food.

Chef Calle presented and served the second taste – rosemary curry grilled shrimp on a bed of cream potato topped with tangy tamarind aioli. Born on the island of St. Vincent, Chef Calle has been cooking from the young age of 10. He calls his amazing style of cooking “Caribbean Fusion”.

Chef Wendy presented and served the third taste – Trinidadian-Chinese chicken with vegetable stir-fried lo mein with
phoulorie (little balls of split pea flour lightly fried and served with mango and tamarind sauce) on the side. Wendy Regisford says, her love for all things food flourished from the age of eleven. Her business, Daddy’s Dishes Food Catering, Inc. has gained recognition through association with Brooklyn’s Sugarcane Restaurant, D’Savannah Bar & Lounge, the West Indian Carnival Association, and the Trinidad & Tobago Mission.

Chef Allona presented and served the forth taste – chicken stuffed with fresh spinach, red peppers and sage sausage topped with mozzarella cheese and a light tomato sauce with a side of creamed potatoes. On September 15, 2012, Allona Bristol launched VINCILLONA’S Weekend Eats and Catering from her own kitchen. She skillfully prepares delicious and affordably priced food for Brooklynites and their surrounding neighbors.
